I have the sony A1 have interval shooting set up to take photo every few seconds but Im trying to do holy grail timelapse and slowly change my settings as I go. The only problem I run into is not being able to change my aperture once it gets dark enough without stopping interval shooting by pressing the shutter button and then starting again after ive changed the aperture.

Am I missing something like a setting that allows me to change that or do i have to start and stop over and over until all the settings have been to my liking for night

I would rather not have to stop interval shooting every time i want to change the aperture

I don't think there is any way to do this in camera. You would need a specialised remote trigger, and even then I'm not sure it will allow it. I'll do a bit of research.
