Custom hold baby!
Yep it might work but from take off to landing it is split seconds and the eye does not leave the evf right hand dials shuffle , oh and I kept the better shots back, low fps Tim

All still doable. You don't need to move your eye at all, just your thumb. It becomes second nature. In any event, I'd set the camera up for birds and use the Custom Hold for flowers!
 
Not overly keen on the last 3 but those ones before that are totally great as i see it..
As I say I would be happy with them.
