Big Bird from the Muppets, yes, 1/100 probably fine. Big bird like an ostrich or an emu, not so much - they can move fairly quickly

You mention a very specific acceleration: 9.8 m/s2 - that sounds like a plummet more than flight

I’ve tried to photograph a female ostrich dancing, and you definitely need a higher shutter speed for that. 1/1000 wasn’t fast enough.
