I bought a A6700 18-135 a few months ago and haven't really got stuck into it. But on a bird watching trip it was painfully obvious that the targets were either too small and or too far away.
So I've just got the Sony 200-600 lens for a more exotic trip - with animals as well, but fear I've overcorrected the other way. Especially as I now find I could have reasonably hired one. Oh well.
Otherwise, I'm delving into an offline A6700 manual and trying to set up some useful defaults.
And get a UV filter or 2 - Gobe optical glass seem to get positive reviews??

I don't have experience with the 6700, but I found the viewfinder on the 6600 and the A7CR too small for accurately focusing on a birds eye.

The 200 - 600 is perfect for bird photography though. I've put loads of examples on here.

I haven't used a uv filter since the eighties.

Welcome! I'm also an A6700 user, but having come from the A6000 and A6400, I am used to the platform's quirks (such as small low-res EVF). The 18-135 is a very versatile travel lens, but if you want to take wildlife shots you might need something like a 100-400... actually Tamron has a 50-400, that might be a good "one-and-done" choice. I use the Tamron 50-300 for whenever I want a little more reach, but I don't do much bird photography and have never been on a safari or the like.

As for UV filters, I don't use them.
